Chinese Style Chicken Soup – 雞湯

Chinese Style Chicken SoupThe Ingredients:

  • One Whole Chicken – Body Bones with meat (I cut out the legs, wings and breasts and freeze them to save for cooking other dishes and only use the body bones and neck for this soup)
  • 3-4 Chinese honey dates (the brown ones)
  • Handful of Goji Berries
  • 4 Tablespoons of Chinese South Almonds (I put in a handful)
  • 1 Tablespoon of Chinese North Almonds (Only ¼ amount compared to the South Almonds, always have less amount of North Almonds)
  • Ginger (About 5 big slices)
  • (1) Tangerine Peel
  • Big Pot of Water
  • Salt

Special Notes:

  • I recommend the Trader Joe’s organic chicken.

Prepping the SoupChicken Soup to Simmer

Directions:

  1. Soak all the Chinese honey dates, Goji Berries, Chinese South Almonds, Chinese North Almonds and Tangerine Peel in water and Rinse 2 times
  2. Boil Pot of Water
  3. Cut the Whole Chicken (Again, I cut out the legs, wings and breasts and freeze them to save for cooking other dishes and only use the body bones and neck for this soup)
  4. When water comes to a boil, add all rinsed assorted herbs, ginger, tangerine peel and body of chicken
  5. Simmer for 3-4 hours
  6. Taste, and add salt as needed
