The Ingredients:

  • One Chicken Carcass
  • 3-4 Dried Red Dates 
  • Handful of Goji Berries
  • 4 Tablespoons of Chinese South Almonds (I put in a handful)
  • 1 Tablespoon of Chinese North Almonds (Only ¼ amount compared to the South Almonds)
  • Ginger (About 5 big slices)
  • 1 Tangerine Peel
  • Big Pot of Water
  • Salt

Special Notes:

  • I recommend the Trader Joe’s organic chicken. I keep the chicken wings, drumsticks and breasts for other dishes.

Directions:

  1. Soak and rinse the Dried Red Dates, Goji Berries, Chinese South Almonds, Chinese North Almonds and Tangerine Peel
  2. Boil Pot of Water
  3. When water comes to a boil, add Chicken Carcass, Dried Red Dates, Goji Berries, Chinese South Almonds, Chinese North Almonds, Tangerine Peel, and Ginger
  4. Simmer for 3-4 hours
  5. Taste, and add salt as needed
