Tilapias with Lemon Zest

I recently bought some frozen Tilapias from Trader Joe’s, which comes in a red package at the frozen fish area. I love using whatever ingredients I find in my fridge, making something from nothing always makes me happy! So on the day I wanted to make the Tilapias, I had some lemons my mom picked from a friends tree which I believe to be Meyer lemons because they are much sweeter and juicier than most lemons, some leftover rosemary and thyme from my sister, leftover spicy Thai chili from another evening, some ginger and garlic which I always have lots of!  Again, simplicity is key, the fish turned out delicious and was perfect over rice!

I mixed the following into a bowl:

* Half a head of garlic, chopped

* Small piece of ginger, chopped

* 5 pieces of Thai Chili, chopped

* 3 stems of Rosemary, leaves stripped and chopped

* 2 stems of Thyme, leaves stripped and chopped

* 2 Meyer Lemons, peel the outside for small pieces of lemon rind and squeeze most of the juice into the bowl, then slice the lemons and put them on the side (yes, I even added lemon rind into the mix)

* Add about 1/4 cup olive oil, add more if needed

* Mix all of the above except the slices of lemon

* After you mix the zesty ingredients, place the Tilapias into a baking pan.

* Heat oven at 375 degrees

* Saturate one side with the ingredients and add sea salt and fresh pepper,  do the same with the other side

* Place the sliced lemons on top

* Bake at 375 degrees uncovered for about 30 minutes, then broil for about 4-5 minutes!

Holiday Get Together With My Dearest Friends

The holidays are the best times to catch up and have get togethers with friends. So last weekend, a few of us ladies got together at my house for a casual fun dinner. Our goal was to get crabs at the Ranch 99, but when we got there, all the crabs were sold out! If you only saw the horror on my face, 4 humongous tanks completely empty. I was hoping that they were hiding some in the back, but I was wrong, I guess they ran out due to Thanksgiving and selling it at $2.99 a pound. Lucky for us, the crab didn’t ruin our fun, I think we were just all excited to be at the supermarket together! We just got some fried crabs that they already had at Ranch 99 and then went to our other favorite place, Trader Joe’s! We got ourselves assorted cheese and crackers & hummus and pita bread. I would also like to add that their edamame hummus was deelious, we finished it all! Fortunately, one of my girlfriends also brought a wonderful layered  sushi rice roll, it is basically similar to a 7 layer dip, but made like a big sushi roll, layered with sushi rice, avocados, shrimp and tobiko on top! She brought nori (seaweed) from her hometown and we wrapped our own sushi and dipped it into soy sauce! It was REALLY good! And being the chef that she is, she also made a pumpkin cream cheese roll! OMG, it was the best dessert ever! We had a pumpkin pie and homemade kimchee from my favorite Korean mom, but after all the food, our tummies couldn’t handle devouring more…so more leftovers for me!  It was such a great night, nothing beats good food and spending time with amazing friends!  Love…love…love…..

Frozen Seasoned Frenched Rack of Lamb from Trader Joe’s

I love TJ’s! We basically coordinate our grocery shopping by going to Chinese Markets one weekend and then TJ’s on another weekend.  We really enjoyed eating this Seasoned Frenched Rack of Lamb the first time, so we decided to have it again! If you want to try this out, it’s located at the frozen section! This flavorful meat is marinated in garlic, salt, ground celery, canola oil, sesame seeds, rosemary and other spices.  It cost around $13.00 plus tax, it was perfect for the two of us! It’s also really simple to prepare, just defrost it and put it in the oven for 25 minutes for medium rare! And that’s it! It was just as good the 2nd time around!
